Token Wines Ribolla Gialla 2021
From Italy's Friuli Colli Orientali with alternating marls and sandstone layers in the soils forming a Marly-arenaceous flysh called 'Ponca' in the local area. The wines are farmed organically.
The Ribolla Gialla has about 20% of the wines fermented with skins in barrel, rest is fermented in tank. It spent about 8 months resting in tank and a small amount of neutral barrel before bottling. Gren apple, lemony freshness and a touch of spice. Dmytro, originally from Ulraine, is one of London's best sommeliers and together with his wife Alyona they started this really interesting project in 2020. Their red wine is fantastic too.
