El Maestro Pedro Ximenez Pedro Ximenez (PX) is a grape variety usually found in Southern Spain( Sherry land ) and is responsible for making the world's sweetest wine. Once harvested, the grapes are left in the sunshine to dehydrate and concentrate the sugars. With almost 45% sugar Pedro Ximenez is as very sweet but this one is a slightly lighter version. You'll probably need to brush your teeth after though. Deep and rich with lovely flavours of raisins, figs, dates and toffee. Some people like to pour it over vanilla ice cream,or use to marinate dark fruit for desserts, but it's a lovely treat on it's own.
