This cuvee was created in 1995 by René, it’s an emblematic wine.
The philosophy is to offer a champagne for lunch, dinner with many food
pairings. Due to high ripeness for this cuvee the malolactic fermentation is not
done.
Great aromatic complexity with some toasted notes and cooked fruits
apricot, lemon confit, chamomile, wild flowers and lightly honeyed notes.
Blocking the malolactic fermentation keeps the flavors bright and fresh.
Texture is very fine with a great expression of Ambonnay Pinot Noir.
