Token Wines Franconia 2021

From Italy's  Friuli Colli Orientali with alternating marls and sandstone layers in the soils forming a Marly-arenaceous flysh called 'Ponca' in the local area. The wines are farmed organically.

Franconia is the Northern italian name for Blaufränkisch and is know for its lively fruit and peppery flavours.

The Franconia is picked fairly early in the ripeness window and fermented in inox vat with gentle punchdowns and an emphasis on keeping the lovely fresh, lively fruit. It spent about 8 months resting in tank and a small amount of neutral barrel before bottling.

Dmytro, originally from Ulraine, is one of London's best sommeliers and together with his wife Alyona they started this really interesting project in 2020. Their white from the region is well worth a try too.
