Late harvest. Although fruit ripening was delayed, fruit condition was clean and flavour development showed maturity. Budburst occurred two weeks later than the historical average. A warm spring allowed flowering to proceed on time with good set recorded on Chardonnays. A mixture of rain and mild conditions post flowering delayed veraison by 3 weeks. October continued to be mild and the harvest began late, beginning on 12th and completed on 24th October.

The wine has spent 6.5 years on lees and 6 months under cork post-disgorgement prior to release.
We hand harvest from 11 vineyard sites, spread across 3 Counties (West Sussex, Hampshire, Kent). We pick, vinify and store all our varieties and plot specific fruit separately, from the 145 different parcels of vines we own. This makes for extra work but allows our winemakers to analyse and select only the very best performing sites when putting blends together.
2015 vintage Blanc de Blancs is comprised of the 20 best performing Chardonnay plots, out of 145, from across 3 vineyards - 1 in Hampshire and 2 in West Sussex.
65% of this blend contains fruit from Hampshire, harvested from our 25ha Chardonnay vineyard Chalk Vale planted in 2009. These vines were planted on chalk soils – highly alkaline, with a high active calcium content – which gives the wine energy, drive, minerality and tension.
