Only white wines from the Savagnin grape made in the oxidative Vin Jaune ("yellow wine") style can be made using the Chateau Chalon label. Francois’s grapes are from the Chateau Chalon region but are made in a more regular, non oxidative style.So Francois has to label his wines as Cotes du Jura. The Bacchus 'La Veine Bleue de Bacchus' is 100% Savignin and aged in old barrels for 14months. Elegant and bright but super nutty too. Really generous and round.
