Francois Rousset-Martin Côtes du Jura Chardonnay Beaumont 2019

Only white wines from the Savagnin grape made in the oxidative Vin Jaune ("yellow wine") style can be made using the Chateau Chalon label. Francois’s grapes are from the Chateau Chalon region but are not necessarily Savagnin and are made in a more regular, non oxidative style. So Francois has to label his wines as Cotes du Jura. 'La Chaux' is 100% Chardonnay and sees 14 months in old barrel. Really elegant and linear in style -  fresh green apple flavour with a Jura nuttiness too.
