Chardonnay
Graubunden
The Hermanns no longer remember in which year the first wine was pressed on the winery. The fact is, however, that great-grandfather Leonhard already enjoyed wine pressing in addition to farming. Back then, around 1930, Pinot Noir was widespread in the Fläscher Halde vineyards. In 1975 Riesling-Sylvaner and Pinot Gris and Completer were added. The foundation for an innovative company was laid.
In 1982, Peter Hermann pressed the first vintage in Hinterdorf and built up today's winery with his wife Rosmarie. The winemaker couple was always open to new ideas. It wasn't long before experiments were being carried out in the cellar with barriques and other grape varieties were planted. Peter was the first winemaker in Graubünden to produce the Sauvignon Blanc variety.
Roman cultivates 6 hectares of vines on the Fläscher Halde. The largest plot is the terraced area in the Fläscher Bad, which was laid out by grandfather Hanspeter during the 1971 melioration. This historically old location is rocky, steep and steeped in history. People bathed here before the hot water springs in Bad Ragaz were used.A selection of old Chardonnay vines. The vines grow on poor, stony soil and their yields are greatly reduced. Spontaneous fermentation in French barriques made according to the phase of the moon. This is followed by storage at low temperatures for one year. The batonnage repeated several times throughout the camp. This Chardonnay is not filtered. Fine, inviting bouquet with notes of white flowers, caramel, citrus biscuit, ripe tropical fruits and herbal-spicy hints. Juicy on the palate, robust acidity, mineral notes and a long finish. Nice acidity that gives length.
